Ingredients
3 medium ripe bananas (mashed)
2 large eggs
1/3 cup honey or maple syrup
1/4 cup plain Greek yogurt (or unsweetened applesauce)
1 tsp vanilla extract
1.5 cups almond flour (or oat flour for non-gluten-free version)
1/2 cup whey protein powder (vanilla or unflavored)
1/2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
Optional: 1/4 cup chopped walnuts or dark chocolate chips
Instructions
1. Preheat the oven to 175°C (350°F) and line a loaf pan with parchment paper or lightly grease it.
2. In a large bowl, mash bananas and mix with eggs, honey/maple syrup, Greek yogurt, and vanilla extract until smooth.
3. In another bowl, combine almond flour, whey protein powder, cinnamon, baking soda, and salt.
4. Mix dry and wet ingredients together until well combined.
5. Pour batter into the loaf pan and smooth the top.
6. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
7. Let it cool for 10–15 minutes before slicing.
