Ingredients
1 cup (120g) oat flour (or almond flour)
2 scoops (60g) Divine whey protein powder (vanilla or chocolate)
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 tbsp cocoa powder (if making chocolate cupcakes)
2 tbsp sweetener (honey, maple syrup, or sugar substitute)
1/2 cup (120ml) almond milk (or dairy milk)
1 large egg
2 tbsp Greek yogurt (for moisture)
1 tsp vanilla extract
1 tbsp coconut oil (or melted butter)
Instructions for a tasty & healthy cupcake
1. Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
2. In a bowl, combine oat flour, whey protein, baking powder, baking soda, salt, and cocoa powder.
3. In another bowl, whisk together almond milk, egg, Greek yogurt, vanilla extract, sweetener, and melted coconut oil.
4. Now mix the ingredients of the two bowls together.
5. Divide batter into the cupcake liners and bake for 12-15 minutes or until a toothpick comes out clean.
6. Let the cupcakes cool before serving.
